Rainbow Cupcakes.

Today for St. Patrick's Day I found a really cute recipe in Family Fun magazine for rainbow cupcakes. The boys and I decided that we would make them today. So this morning we did and as cute as they turned out they were not as easy as I thought. First I made the cake mix. I seperated it into 6 different bowls and the boys helped me mix the colors. Then we had to layer the colors in the cupcake pan. That part took awhile. I enclosed the recipe at the end in case anyone wants to give it a try. They are cute and very tasty. Perfect for little leprechauns:)

Really cute and worth the work. This might be a St. Patrick's day tradition for our family.


Ingredients:
White cake mix (we used an 18-1/4-ounce box)
Food coloring (red, blue, green, and yellow)
Baking cups
Whipped cream (optional)

Instructions:
Prepare your favorite white cake mix, then divide the batter evenly among six small bowls. Following the chart below, dye each bowl of batter a rainbow color.

RAINBOW COLOR DROPS OF FOOD COLORING
Purple 9 red and 6 blue drops
Blue 12 drops
Green 12 drops
Yellow 12 drops
Orange 12 yellow and 4 red drops
Red 18 drops

Line 16 muffin pan wells with baking cups. Evenly distribute the purple batter among the cups, then the blue, and so on, following the order shown. As you go, gently spread each layer of batter with the back of a spoon to cover the color underneath.

Bake the cupcakes according to your recipe directions. Before serving, remove the paper wrapping, and if you like, top each cupcake with a whipped-cream cloud.

  3. Love the cupcakes! I also saw that recipe but was way too intimidated to try it, but you made it look so much easier. Of course, I've heard you're an awesome cook, so that's probably why. ;) Your boys are very lucky to have such a great mom!
